- ½ cup chick pea flour
- 2 eggs
- medium onion, finely chopped
- 1 cup spinach, finely chopped
- ½ zucchini, finely chopped
- 1 tsp Curry Masala
- ½ tsp salt
- ½ cup milk
- Oil for shallow frying
Method of Preparation of Indian Pancakes:
In a bowl. Mix together all the above ingredients (except oil). Add extra chick pea flour if necessary to make thick batter.
Heat 2 teaspoons of oil in a frying pan. Add pancake mixture to frying pan and cook on both sides until slightly brown.
Serve with raita or tomato ketchup.
