Cauliflower and Potato Curry

Aloo gobi is a vegan dish from the Indian subcontinent made with potatoes, cauliflower and Indian flavors. It is well known in Indian, Bangladeshi, Pakistani, and Nepali foods. - 2 tbsp oil
- ½ tsp mustard seeds
- ½ tsp cumin seedspd
- 6-8 Curry Leaves
- 2 medium potatoes , peeled and cubed
- ½ medium cauliflower ,cut into small pieces
- 1 cup peas
- 2 tbsp Curry Masala
- 1 tsp salt OR salt to taste
- 1 tbsp cilantro , to garnish
- ½ tsp Garam Masala , togarnish
Method of preparation:
In a pan , heat oil on medium high temperature. Add mustard seeds and cumin seeds. Cover pan with a lid and allow to sizzle and pop. Add curry Leaves to oil. Aloo Gobi Recipe
Add potatoes , peas and cauliflower . Reduce heat to low .
Add Curry Masala and salt . Fold inspices , coating all potatoes , peas and cauliflower .
Cover with lid and cook low heat until potatoes are soft and cooked , approximately 20 minutes. When potatoes are cooked the dish is ready to serve .
Gagnish with a sprinkle of Garam Masala and cilantro .
Make this dish a moist curry by adding ¼ cup of canned crushed or ground tomatoes and ½ cup of water and simmer . Add ½ tsp extra of Curry Masala .
