Dahi Vada Recipe,Ingredients for the vadas:
| 1 cup sooji
unbleached wheat flour 1 cup
1 teaspoon cumin seeds
1½ teaspoon garam masala
1 tablespoon ground ginger root
salt 1 teaspoon or salt to taste
1 finely chopped Serrano chili
¼ teaspoon baking powder
Oil for deep frying
Dahi Vada Recipe
Method of Preparation:
Mix all the ingredients in a bowl. Add one cup water and make into a smooth, thick batter. Heat the oil and gently drop one teaspoon of batter at a time into the oil.
Fry until golden brown. Remove onto a kitchen towel and let cool. Or conversely, you can purchase frozen vadas.
For the yogurt :
| 16 oz.low fat or non-fat, plain yogurt
1 tablespoon chopped cilantro
½ teaspoon salt
1 teaspoon lightly roasted sesame seeds
½ teaspoon roasted and crushed cumin seeds
½ teaspoon paprika
In a large bowl, lightly whip the yogurt with a fork and mix all the ingredients, leaving a few cilantro leaves for garnishing. Soak the vadas in warm water for three or four minutes.
Gently squeeze out any excess water and add to the yogurt. Garnish with cilantro and serve with any rice pilaf or as a side dish.
