Baked Samosas Recipe

|2 tbsp||sunflower oil|
|¼ tsp.||salt or salt to taste|
|2 green chilies||finely chopped|
|¼ tsp.||ground coriander|
|pinch of||garam masala|
|¼ tsp.||ground cumin|
|200 g||sweet potatoes, peeled, boiled and roughly mashed|
|100 g||potatoes , peeled , boiled and roughly mashed|
|frozen mixed vegetables||150 g|
|handful of coriander leaves,||washed and chopped|
|Whole wheat flour||200 g|
|100 g||plain flour, plus extra for sealing and dusting|
|½ tsp.||carom seeds|
|2 tbsp.||sunflower oil, plus extra for brushing|
Method of Preparation:
Heat the oil in a saucepan, then add the onion and fry for 5-7 minutes until diaphanous. Add the chilies and stir-fry for two minutes. Then add the salt, ground coriander, cumin and garam masala, and stir-fry for a minute.
Now add the mashed potatoes, vegetables and coriander leaves and stir well to mix the ingredients together.
To make the pastry, preheat the oven to 180ᵒC.
Place the flours, oil, carom seeds and 5-6 tablespoons of water into a large bowl. Knead for 5-7 minutes to make a firm, smooth dough.Baked Samosas Recipe
Mix together a little plain flour and water to make a glue – like a paste.
Heat a frying pan on a medium heat.
Divide the dough into golf-ball sized pieces and, on a floured surface, roll out into rounds about 3 mm thick and 7.5 cm in diameter.
Put a round of dough in the frying pan and cook for a minute on each side. Remove from the pan with a spatula, place on work surface or chopping board and cut each round in half.

Carefully lift one the semi-circles and apply the flour and water paste to the straight edge.
Fold it to make a cone shape,sealing the pasted straight edge,then lift the cone with the tapered end at the bottom,and fill it with about 1 heaped teaspoon of the potato mixture.
Seal the samosa with a little more paste, pressing the edges firmly together to ensure there are no gaps,then folding over to seal. Repeat the process until all of the pastry has been used up.Baked Samosas Recipe
Put the samosas on the lined baking tray and brush them on both sides with a little oil.
Bake for 25 to 30 minutes, turning them once, until they are lightly browned. Serve hot with any condiment.
