|Split Moong dal with skins||1 cup|
|Rice||1 ¼ cup|
|Finely Chopped Ginger||1 tbsp|
|Finely Choped Garlic||1 tbsp|
|Curry Leaves||20 or more|
|Red Chili Powder||½ tsp|
|Turmeric Powder||1 tsp|
|Coriander Leaves||and ghee|
Method of Preparation: Khichdi Recipe
Wash rice in cold water two or three times until the water runs clear,then set aside. Repeat the same procedure with the Moong dal.
Check the dal for any debris. Now, put 5 ½ cups of water in a pan, add salt and bring to a boil.
Add Moong and boil for approximately three minutes, carefully removing any froth that may appear on the surface.
Add the rice and boil for another couple of minutes, then reduce heat to very low. Cover and cook for approximately fifteen minutes, or until Moong is done.
Then in an another pan heat the ghee and add bay leaves, curry leaves, chopped tomatoes and other ingredients. Spread the top with butter or margarine.
Serve warm with plain yogurt and/or with any vegetable or lentil dish. Khichdi Recipe
When cooked, this dish is better if slightly runny, like thick porridge. Add hot water halfway if you find it drying up.
